Metalβorganic frameworks (MOFs) are a versatile group of crystalline porous materials. They have adjustable pore sizes, very high surface areas, and surface chemistry that can be customized. This research focuses on making, characterizing, and testing biocompatible MOFs for foodβrelated uses, especially active packaging, freshness monitoring, and contaminant sensing. Molecularβdynamics simulations and laboratory measurements are used to examine gasβadsorption capacity, antimicrobial release rates, and optical sensing mechanisms of these materials. We also study how embedding MOFs in biopolymer matrices affects mechanical strength, thermal stability, and barrier properties against moisture and oxygen.
